Shrimp-Rice Parmesan
Shrimp-Rice Parmesan is an moderately easy dinner. Made with 1/4 c. salad oil, 2/3 c. packaged precooked rice, 1 c. water, 1 (1 lb. 4 oz.) can tomatoes and 2 1/2 tsp. salt, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

About 1 hour and 15 minutes before serving, in hot oil in skillet over medium heat, cook rice, stirring constantly, until golden.
Add water, tomatoes, salt, pepper, Worcestershire sauce, onion and carrots.
Cook, covered, until carrots are tender.
Add shrimp.
Cook 5 minutes or until shrimp are tender.
Serve, passing cheese.
Makes 4 servings.
