Shrimp Pasta
Shrimp Pasta is an impressive dinner. Made with 1 lb. pasta, 1 stick butter, 2 1/2 tbsp. fresh ginger, 1 1/2 tbsp. yellow mustard seeds and 1/3 c. dry-roasted cashews (unsalted), this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Grate ginger or cut into fine strips.
Heat a large frying pan and add butter, 2 1/2 tablespoons ginger, the mustard seeds and cashews.
Sauté for 2 minutes.
Add precooked pasta (use a kind with ridges), coconut and cilantro.
Sauté over medium heat until hot.
Set aside; keep warm.
Heat a large frying pan and add oil and 1 1/2 tablespoons ginger.
Sauté 30 seconds.
Add shrimp (use large precooked ones), scallions and lime juice.
Sauté until hot.
Add salt and pepper to taste.
Serve over hot pasta and garnish with lime wedges and cilantro.
