Shrimp
Melt butter and blend in flour. Add seasonings.
Add cream gradually and cook until thick and smooth. Stir constantly.
Egg yolks; stir a little hot sauce into egg yolks.
Mixture into remaining hot sauce.
Add shrimp and heat through.
Do not boil or it will curdle.
Remove from heat and stir in sherry.
Serve over rice or puff pastry shells.
