Shrimp Creole
Shrimp Creole is an moderately easy dinner. Made with 1/2 c. wish-bone italian dressing, 1 medium green pepper, cut into chunks, 1 medium onion, sliced, 1 (14 1/2 oz.) can whole peeled tomatoes (undrained), chopped or use diced tomatoes and 1 lb. uncooked medium shrimp, cleaned, this recipe delivers authentic, satisfying flavors. In medium skillet, heat Italian dressing and cook green pepper and onion over medium heat, stirring occasionally, 5 minutes or until tender. Stir in tomatoes and simmer, covered, 15 minutes. Add shrimp and red pepper and simmer, covered, an additional 5 minutes or until shrimp turn pink. To serve, arrange shrimp mixture over hot rice. Makes about 4 servings.
