Shrimp Creole
Shrimp Creole is an impressive dinner. Made with 3 tbsp. olive oil, 1 large onion, chopped, 1 clove garlic, minced, 1 1/2 c. celery, chopped and 1 (16 oz.) can tomatoes, mashed, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Add olive oil to a large, hot skillet and saute the onion, garlic and celery until soft.
Add all of the rest of ingredients (except shrimp and bell pepper) and simmer for 45 minutes or as long as 1 1/2 hours.
You may have to thin it now and then with a bit more wine or water.
About 20 minutes before serving, add the bell pepper.
Add the shrimp and simmer for 3 to 4 minutes or until warm.
Remove bay leaves and serve with hot, fluffy rice.
