Shrimp Creole
Shrimp Creole is an moderately easy dinner. Made with 2 c. onions, chopped, 1 c. celery, cut up, 4 tbsp. olive oil, 1 (28 oz.) can tomatoes and 1 can tomato paste, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Saute onions and celery in olive oil.
Add tomatoes and paste; stir well.
Add garlic, sugar, salt, pepper and bay leaf.
Stir and simmer 30 to 40 minutes; add shrimp.
Cook 15 minutes longer; add peas.
Serve over rice.
Serves 10 to 12.
