Shrimp Creole
Shrimp Creole is an impressive dinner. Made with 1/4 c. cooking oil, 2 large onions, chopped, 1 (8 oz.) can tomato sauce, 1 (6 oz.) can tomato paste and 1 (16 oz.) can whole tomatoes, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

In hot oil, brown one onion.
Add tomato sauce and cook to a paste.
Add tomato paste, whole tomatoes and Ro-Tel tomatoes.
Add remaining onion, celery, and bell peppers; mix well.
Add onion tops, parsley and water.
Cook to a thick sauce, but don't overcook; greens should remain whole.
Add shrimp, salt and pepper to taste and cook for approximately 30 minutes.
Serve over rice. Yield
