Shrimp Casserole
Shrimp Casserole is an moderately easy dinner. Made with 2 c. raw rice, 2 to 3 lb. shrimp, shelled and deveined, 1 large bell pepper, 1 large onion and 1 (4 oz.) can sliced mushrooms, drained, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Cook rice and set aside.
Chop onion and bell pepper.
Saute in a small amount of drippings until cooked.
Combine cooked rice, shrimp, onion, bell pepper and the can of mushrooms in a large rectangular greased 9 x 13-inch casserole.
Stir in bottle of Thousand Island dressing.
Cover with strips of raw bacon.
Cook at 350Β° for 1 hour, uncovered.
Fluff with fork.
Serves 8.
