Shredded Yams
Shredded Yams is an moderately easy dinner. Made with 2 lb. sweet potatoes, 1 gal. water, 1 tbsp. salt, 1 c. pineapple juice and 1 c. sugar, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Peel and shred potatoes.
Soak for several minutes in mixture of 1 gallon water and salt.
Drain and rinse.
Place in shallow baking dish.
Pour pineapple juice over potatoes.
Mix sugar, syrup and 1/2 cup water in saucepan.
Cook until thickened, stirring constantly.
Stir in margarine.
Add to potatoes.
Bake at 350Β° for 35 minutes.

8 servings.
