Sherwood's Shrimp Marinara
Sherwood'S Shrimp Marinara is an moderately easy dinner. Made with 2 lb. cooked shrimp, 1/4 c. olive oil, 2 cloves garlic, sliced, 1 (1 lb. 13 oz.) can tomatoes, sieved and pureed and 1 1/2 tsp. salt, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Shell, wash and drain the shrimp.
In a large skillet, heat the oil and saute gently over medium-high heat for 5 minutes.
Remove the shrimp from the skillet and keep warm.
Add the garlic and saute until golden.
Stir in the tomatoes, salt, oregano, parsley, pepper and wine.
Cook rapidly, uncovered, for 15 minutes or until thickened, stirring occasionally.
If the sauce becomes too thick, add 1/4 to 1/2 cup water.
Add the shrimp and reheat gently. Meanwhile, cook the rice.
Serve immediately with the shrimp sauce. Makes 8 servings.
