Kyrgyz shakarap is a juicy tomato and onion salad where salted onions soften in tomato juices with basil, dill, and black pepper. It is simple, sharp, and perfect beside grilled meat or plov.

Slice ripe tomatoes into thin wedges and save every bit of their juice.
Cut onion into fine half-moons, salt it lightly, and squeeze until it softens.
Toss tomatoes, onion, basil, dill, chile, black pepper, and sunflower oil together.
Rest the shakarap for ten minutes so the onions marinate in tomato juice, then serve cool.
