Senate Bean Soup
Senate Bean Soup is an moderately easy dinner. Made with 1 lb. dried white beans, washed and drained, 1 large smoked ham hock, 3 potatoes, cooked and mashed, 2 onions, chopped and 1 c. diced celery, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
Cover beans with water; bring to boil and boil for 2 minutes. Remove from heat.
Cover pan and let set for 1 hour.
Drain beans and measure liquid; add enough water to make 5 quarts.
Bring to boil and simmer, covered, for 2 hours.
Add remaining ingredients except salt and pepper and simmer covered 1 hour longer.
Remove bone, cut up meat and return meat to soup.
Season to taste.
