Seafood Au Gratin
Seafood Au Gratin is an moderately easy dinner. Made with 1 1/2 lb. boneless, skinned trout or red fish, 1/2 lb. shrimp or crab meat or 1/4 lb. each mixed, 1/4 lb. fresh mushrooms, sliced, 2 tbsp. lemon juice and 2 tbsp. flour, this recipe delivers authentic, satisfying flavors. Be sure to remove skin and bones from fish and cut into small pieces.
For individual servings in ramekins or sea shell servers, divide the fish, seafood and mushrooms into the servers equally. Sprinkle with lemon juice.
Heat the butter in a 1 1/2-quart saucepan.
Stir until thickened into a smooth sauce.
Stir the egg yolks and cream together and add the hot sauce.
Pour the sauce over the fish.
Sprinkle with the bread crumbs, combined with the grated cheese and dot the surface with butter.
Bake in a 350Β° oven for 20 minutes or until bubbling hot.
