Scalloped Eggplant

Made with 2 tbsp. chopped green pepper, 2 tbsp. chopped onion, 1/4 c. melted butter, 1 medium eggplant, peeled and cubed and 2 c. chopped canned or cooked tomatoes, this recipe delivers authentic, satisfying flavors. Saute pepper, onion and butter.
Add eggplant, tomatoes, salt and simmer, covered, for 10 minutes.
Spoon into a lightly greased 2-quart casserole.
Combine remaining butter with bread cubes and spoon over eggplant.
Bake at 350Β° for 20 minutes or until tender. Serves about 4.
