Scalloped Corn
Scalloped Corn is an moderately easy dinner. Made with 22 saltine crackers, 1 egg, 1 c. milk, 1/2 tsp. minced diced onion and 1/4 tsp. salt, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Put crackers in plastic bag.
Close bag; crush crackers with rolling pin.
In casserole dish, beat egg with fork.
Stir in milk, onion, salt and pepper.
Measure 2/3 cup cracker crumbs; add to milk mixture.
Add corn and stir.
Put rest of crumbs into small bowl.
Put butter into skillet on low heat.
Heat until butter melts.
Pour over crumbs in bowl.
Stir to mix.
Sprinkle crumbs over corn mixture.
Put in 350Β° oven for 1 hour or until knife inserted comes out clean.
Makes 6 servings.
