Sauteed Zucchini And Sausage is an easy dinner. Made with 1/4 lb. mild bulk sausage, 1 small zucchini, sliced, 2 tbsp. chopped onion, 3 tbsp. tomato sauce and 1 tbsp. grated parmesan, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Cook sausage in a small skillet until browned; drain off drippings, reserving 1 1/2 tablespoons.
Crumble sausage and return it to the skillet.
Add zucchini and onion to sausage.
