Sausage Jambalaya
Sausage Jambalaya is an impressive dinner you can prepare in just 54 minutes. Made with . smoked and hot sausage mixed, thinly sliced, small eggplant (about 1 lb.), c. chopped green peppers, c. uncooked rice and c. chicken broth, this recipe delivers authentic, satisfying flavors. In an ovenproof skillet, cook sausage until lightly browned. Add eggplant, onions and green peppers.
Cook until tender-crisp. Stir in rice, broth, tomatoes and seasonings. Bring to a boil. Cover and bake at 350Β° for 30 minutes or until rice is tender and liquid is absorbed.
Fluff lightly with a fork.
Remove bay leaf.
