Sausage Eggplant Casserole
Sausage Eggplant Casserole is an moderately easy dinner. Made with 6 tbsp. butter, 5 c. diced, peeled eggplant, 1 lb. loose sausage or 2 c. ground beef, 2 onions, sliced and 1 1/2 c. canned tomatoes, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Melt 3 tablespoons of butter in skillet and add eggplant. Cook 5 minutes.
Add sausage to skillet and cook thoroughly.
Salt and pepper to taste.
Mix together onion, tomatoes and cheese, reserving a little of the cheese.
In a greased casserole, alternate layers of tomato, onion, cheese mixture with layers of eggplant, sausage mixture.
Mix crumbs with remaining cheese and sprinkle over casserole.
Dot with butter.
Bake at 375Β° for 35 minutes.
