Sauerkraut Soup is an moderately easy dinner. Made with 1 lb. smoked sausage, cut in 1/2 inch pieces, 5 medium potatoes, peeled and cubed, 2 medium onions, chopped, 2 carrots, cut in 1/4 inch slices and 3 cans (14 oz. each) chicken broth, this recipe delivers authentic, satisfying flavors. In large soup pan, combine sausage, potatoes, onion, carrots and chicken broth; bring to a boil.
Reduce heat and simmer 30 minutes or until potatoes are tender.
Add sauerkraut and tomatoes. Return to boil.
Reduce heat and simmer 30 minutes longer.
If thinner soup is desired add more broth.
