Sauerkraut Salad
Sauerkraut Salad is an moderately easy dinner. Made with 1 (27 oz.) can sauerkraut, 1 c. chopped celery, 2 tbsp. chopped pimento, 1/3 c. sugar and 1 medium green pepper, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Place sauerkraut in strainer and rinse well under cold running water.
Thoroughly drain off all liquid and place kraut in a large bowl.
Add remaining ingredients and mix until thoroughly blended. Spoon salad into jars or plastic containers and cover.
Chill in refrigerator overnight.
Makes 1 1/2 quarts.
