Santa Fe Chicken
Santa Fe Chicken is an moderately easy dinner. Made with 1 1/4 lb. or 3 large chicken breasts, cut into strips, 1 tsp. paprika, 1 tsp. salt, 2 or 3 tbsp. oil and 1 to 2 c. monterey jack cheese, grated, this recipe delivers authentic, satisfying flavors. Sprinkle chicken with paprika, salt and pepper.
In a large skillet, brown chicken strips. Add onion, green pepper and garlic. Cook until tender. Add tomatoes and chicken broth.
Bring to a boil.
Add rice, then remove from heat and cover.
Let set until all liquid is absorbed.
Sprinkle with cheese.
