Salmon Croquettes
Salmon Croquettes is an moderately easy dinner. Made with 1 large potato, 1 large can red salmon, drained and deboned, 1/4 c. finely chopped onions, 1 tbsp. chopped parsley and 1 egg, beaten, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Peel and boil potato until soft enough to mash.
Combine with salmon, onion, parsley, egg and seasonings in a large bowl.
Beat on low speed of electric mixer until well blended.
Shape into croquettes, any size you wish, and fry in 1/2 inch oil in a heavy skillet until golden brown.
Drain on paper towels.
