Salmon Croquettes
Salmon Croquettes is an moderately easy dinner. Made with 1 can (14 3/4 oz.) salmon, 1 tbsp. grated onion, 1/2 tsp. lemon juice (optional), 1 c. leftover mashed potatoes or instant and 1 egg, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Flake salmon; add onion, lemon juice, mashed potatoes and mix well.
Form into croquettes desired size and shape and roll in cracker crumbs, dip in slightly beaten egg diluted with water, roll in crumbs again. Fry in oil until brown.
Drain on absorbent paper.
Makes 5 to 6 croquettes.
