Salad Provencale
Salad Provencale is an moderately easy dinner. Made with 3 c. cooked roast beef, pork, ham or poultry, cut in thin strips, 3 c. cooked rice, 1 1/2 c. sliced celery, 1/2 c. sliced green onions (including tops, more onions may be added, if desired) and 1/2 c. mayonnaise, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Combine meat, rice, celery and onions.
Blend remaining ingredients except tomatoes.
Stir into rice mixture.
Chill. Arrange on salad greens, if desired, and garnish with tomato wedges.
