Russian Beet Salad
Russian Beet Salad is an moderately easy dinner. Made with 1 (16 oz.) can beets, 1 (3 3/4 oz.) pkg. lemon jell-o, 1/4 c. sugar, 1/4 c. vinegar and 1 tbsp. horseradish, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Drain beets.
Reserve liquid and slice into shoestrings.
Add enough water to beet juice to make 1 1/2 cups.
Bring to a boil. Add Jell-O and stir until Jell-O is dissolved.
Cool and add sugar, vinegar, horseradish and lemon juice.
Add beets and pour into a 9 x 9-inch glass dish; refrigerate until completely set.
Mix cream cheese and mayonnaise.
Add enough milk until it's like icing. Spread over top of salad and refrigerate until serving time.
Great for a buffet.
