Royal Cashew Brittle
Royal Cashew Brittle is an moderately easy dinner. Made with 1 c. sugar, 1/2 c. corn syrup, 1/2 c. water, 1 c. chopped raw cashews and 1/4 tsp. salt, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Grease cookie sheet.
In saucepan, combine sugar, syrup and water.
Cook until sugar is dissolved and without stirring to 260°.
Add nuts and salt cooking until 290°, stirring to prevent scorching.
Remove from heat and add butter, vanilla and soda. Pour onto cookie sheet.
Let stand until just cool enough to handle and stretch brittle slightly with greased fingers.
Cool and break into pieces.
