Rosy Spring Salad
Rosy Spring Salad is an moderately easy dinner. Made with 4 c. chopped rhubarb, 1 1/2 c. water, 1/2 c. sugar, 2 (3 oz.) pkg. strawberry jello and 1 c. orange juice, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Combine rhubarb, water and sugar in a saucepan.
Cook until tender.
Pour this over gelatin.
Stir until dissolved. Add orange juice and rind.
Chill until syrupy.
Add strawberries.
Pour into an oiled container (6-cup mold). Chill until set. Makes 8 servings.
