Risotto is an moderately easy dinner. Made with 2 c. orzo (16 oz. box), 1/2 c. finely diced onion, 2 tbsp. butter, 2 c. canned tomatoes and 2 c. boiling water, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Saute onion in butter until golden brown.
Add tomatoes and simmer 10 minutes.
