Rice Veracruz
Rice Veracruz is an moderately easy dinner. Made with 1 lb. ground beef, 1 medium onion, chopped, 1 green pepper, sliced (3/4 c.), 1 (16 oz.) can tomatoes and 1 can condensed beef consomme, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Saute beef, onions and peppers in oil in a Corning Ware dish. Stir for 5 minutes until brown and onions are tender.
Add tomatoes, consomme, salt and 1/2 the olives.
Bring slowly to boiling.
Stir in rice and cook for 5 minutes, covered.
Bake at 375Β° for 20 minutes.
Uncover, stir in cheese and olives.
Bake 15 minutes more.
