Rice Stuffed Flounder
Rice Stuffed Flounder is an impressive dinner. Made with 1 small onion, chopped, 1 c. sliced mushrooms, 1 tbsp. margarine, 1 c. chicken broth and 1/2 c. half and half, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Preheat oven to 350Β°.
Brown onion and mushrooms in hot margarine.
Mix broth, milk, cornstarch and dill.
Add to onion and mushrooms.
Bring to a boil.
Add rice and return to boil. Reduce heat, cover and simmer for 5 minutes.
Remove from heat. Stir in carrots and zucchini; let stand for 5 minutes.
Stuff fish with mixture and sprinkle with salt and paprika.
Bake fish over any remaining mixture for 15 to 20 minutes.
Serves 4.
