Rice Pudding
Rice Pudding is an moderately easy dinner. Made with 2 large eggs, 1/2 c. sugar, 1/4 tsp. salt, 2 c. milk and 2 c. cooked rice, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Preheat oven to 350Β°. In large bowl, beat eggs, sugar and salt.
Scald milk and pour into egg mixture.
Stir in raisins, rice and vanilla.
Pour into slightly greased ovenproof baking dish, 1-quart size.
Sprinkle with nutmeg.
Place the dish in the oven in a pan of water 1-inch deep.
Bake for 1 hour and 15 minutes.
