Rice Pudding
Rice Pudding is an moderately easy dinner. Made with 1/2 c. carolina long grain rice, 3 c. water with 1/2 tsp. salt and 1 tbsp. butter, 1 pt. heavy cream, 1 pt. milk and 2 eggs, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Place rice in water with salt and butter.
Simmer down until stiff, about 1/2 hour, after it comes to a boil.
While rice is boiling, beat eggs, sugar and vanilla together.
After rice is stiff, add cream and milk and boil 20 minutes, mixing continually. Add egg/sugar mixture to rice.
Bring to boil; take off stove and cool.
Sprinkle with cinnamon if desired.
