Rice Casserole
Rice Casserole is an moderately easy dinner. Made with 1 c. rice, 2 1/4 c. bouillon or 2 1/4 c. water with 3 chicken bouillon cubes, 1 tsp. each minced onion, celery and green pepper, 1 (4 oz.) can green ortega chili peppers and 1 (16 oz.) sour cream, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Cook rice in bouillon with onion, celery and green pepper added.
Seed, wash and cut up chili peppers.
In buttered casserole, put a layer of rice, 1/3 of the sour cream, 1/3 of the chilies and 1/2 of the Jack cheese.
Repeat layers.
Bake at 350Β° for 20 to 30 minutes.
The last 5 minutes, cover with Cheddar cheese.
