Rice Casserole
Rice Casserole is an moderately easy dinner. Made with 3 c. cooked rice (1 c. raw equals 3 c. cooked), 1 pt. sour cream, 1 (4 oz.) can chopped green ortega chilies, 1 (4 oz.) can green chili salsa and salt and pepper to taste, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Use buttered flat 8 x 8-inch pan.
Combine rice, sour cream, chilies, salsa, salt and pepper.
Put a layer of rice combination and about 1/2 pound Jack cheese, shredded.
Finish with rice, top with grated Cheddar cheese.
Bake at 325° for 1/2 hour or 300° for 45 minutes.
Can be combined the day before serving and held in refrigerator for baking.
