Rice-a-L'Orange
Rice-A-L'Orange is an moderately easy dinner. Made with 1 (8 oz.) can pineapple slices, 1/3 c. chopped green pepper, 1/3 c. chopped sweet red pepper, 1/4 c. butter or margarine and 1 3/4 c. orange juice, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Drain pineapple slices, reserving juice.
Chop pineapple and set aside.
Saute peppers and onion in 1 tablespoon melted butter, in a saucepan, until tender.
Add orange juice and bring to a boil.
Add rice, remaining 3 tablespoons butter, chopped pineapple, salt and curry powder.
Remove from heat.
Cover and let stand 10 minutes, stirring once.
Garnish with red and green pepper strips.
Makes 6 servings.
