Rhubarb Pie
Rhubarb Pie is an moderately easy dinner. Made with 2 1/2 c. rhubarb, cut fine, 1/2 c. flour, 2 eggs, 1 c. sugar and 1/2 tsp. salt, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Mix together first 5 ingredients (rhubarb, flour, eggs, sugar and salt).
When thoroughly blended, pour into unbaked shell.
Blend brown sugar, flour and butter for topping.
May have to add more flour to get the desired consistency.
Sprinkle over rhubarb mix.
Bake at 425° for 15 minutes, then at 350° for 30 minutes.
