Rhubarb-Orange Bread
Rhubarb-Orange Bread is an moderately easy dinner. Made with rind of 2 oranges, 3 tbsp. water, 2 c. sugar, divided, 1 c. buttermilk and 2 eggs, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Cut orange rind very fine.
Cover with water.
Cook until tender; drain.
Add 3 tablespoons water and 1 cup sugar.
Boil until thick; set aside.
Combine buttermilk with remaining 1 cup sugar.
Beat in eggs.
Sift flour with salt and baking powder. Stir into egg mixture.
Stir in rhubarb and orange rind.
Pour into two greased 9 x 5-inch loaf pans.
Bake in 350Β° oven for 45 minutes.
