Rhubarb Matrimonial Bars
Rhubarb Matrimonial Bars is an moderately easy dinner. Made with 1 3/4 c. cake flour or 1 1/2 c. all-purpose flour, 1/2 tsp. salt, 1 1/2 c. oatmeal, 1/2 tsp. soda (1 tsp. may be used if desired) and 1 c. brown sugar, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Sift flour, soda and salt together.
Add sugar and oatmeal. Cut in butter until it is crumbly.
Put half of this in bottom of pan.
Cover with 2 quarts of young tender rhubarb, cut fine and mixed with 1 cup of granulated sugar.
Cover with remainder of crumbs.
Bake 1 hour in a 350Β° oven until a deep golden color. Let cool.
Cut and serve.
