Rhubarb Custard Pie
Rhubarb Custard Pie is an moderately easy dinner. Made with unbaked pie crust, 3 tbsp. flour, 2 eggs, 3 c. rhubarb, cut into 1/2 inch pieces and 1 c. sugar, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Line pie plate with pastry.
Set in refrigerator until ready to be filled.
Combine sugar, 2 tablespoons of the flour and salt. Add slightly beaten egg yolks.
Add rhubarb.
Sprinkle 1 tablespoon flour over bottom of crust; fill crust with rhubarb mixture.
Set in preheated oven and bake.
Beat 2 egg whites until stiff and add 4 tablespoons of sugar for meringue.
Spread on pie when done and brown in oven at 325Β°.
