Rhubarb Cobbler
Rhubarb Cobbler is an moderately easy dinner. Made with 4 c. rhubarb, cut into 1/2-inch pieces, 1 3/4 c. sugar, 1 cube margarine, 1 tsp. baking powder and 1 c. flour, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Place rhubarb in a 9 x 13-inch pan.
Add sugar; dot with 1/4 cup margarine.
Pour 1/2 cup water over all.
Sift together dry ingredients with 1 tablespoon sugar.

Add egg and milk to dry ingredients.
Stir to moisten.
Spread over rhubarb.
