Rhubarb Cake
Rhubarb Cake is an moderately easy dinner. Made with 1 1/3 c. brown sugar, 1/2 c. shortening, 1 egg, 1 c. buttermilk (i use regular milk) and 1 tsp. baking soda, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Beat brown sugar, shortening and egg together.
In another bowl, combine buttermilk, baking soda and salt. Then add this to the first bowl alternately with flour. Add rhubarb, nuts and vanilla.
Pour into 9 x 13 pan. Bake 40 to 45 minutes at 350Β°.
