Rhubarb Bread
Rhubarb Bread is an moderately easy dinner. Made with 1 1/3 c. brown sugar, 2/3 c. vegetable oil, 1 beaten egg, 1 tsp. vanilla and 1 c. buttermilk or sour cream, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Mix together sugar and oil.
Blend in egg, vanilla and milk. In separate bowl, combine flour, salt, cinnamon and baking soda. Add to moist ingredients.
Stir in rhubarb and nuts.
Divide batter between 2 well-greased 8 x 4-inch loaf pans.
Bake at 350Β° for about 45 minutes or until bread tests done with wooden pick. Turn out onto rack to cool.
Yield: 2 loaves.
