Rhubarb Bread
Rhubarb Bread is an moderately easy dinner. Made with 1 1/2 c. light brown sugar, 2/3 c. vegetable oil, 1 egg, beaten, 1 c. sour milk and 1 tsp. baking soda, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Preheat oven to 325Β°.
In a bowl, combine sugar, oil and egg. In another bowl, combine baking soda, salt and vanilla; add to sugar combination.
Alternately add flour; mix well.
Fold in raw rhubarb and nuts; spoon into 2 greased and floured 8 x 4 x 3-inch bread pans.
Combine sugar and melted butter; mix thoroughly. Scatter on top of dough.
Bake for 45 to 50 minutes.
Remove from pan immediately; cool.
