Reuben Salad
Reuben Salad is an moderately easy dinner. Made with 1 (16 oz.) can sour kraut, drained, 1/4 c. dill pickle, chopped, 1/4 c. parsley or cilantro, chopped, 6 c. lettuce, (romaine preferred), chopped and 1 1/2 lb. roast beef, chopped, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Mix all together.
Layer half of lettuce, half of sour kraut, dill pickle and parsley mix, half of roast beef, half of Swiss cheese and spread with half of the dressing.
Repeat layers and serve sprinkled with rye croutons or with toasted slices of rye bread.
