Reuben Casserole
Reuben Casserole is an moderately easy dinner. Made with 1 (14 oz.) can sauerkraut, 1 can corned beef, 1 small carton sour cream, 1 small chopped onion and swiss cheese, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Spray or butter a 2-quart pan.
Mix drained and rinsed sauerkraut, onion and sour cream. Pour into pan to cover bottom. Crumble a layer of corned beef on top. Grate or thinly slice Swiss cheese on top of corned beef. Toast rye bread and crumble on top until well covered. Drizzle butter over all. Bake at 350Β° for 35 to 40 minutes.
Serves 4 to 6.
