Refrigerator Pickles
Refrigerator Pickles is an moderately easy dinner. Made with 7 c. sliced cucumbers, 2 to 3 tbsp. salt, 1 c. sliced onion, 1 c. sliced green pepper and 1 c. white vinegar, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

In 5-quart bowl, sprinkle salt over cukes, onion and pepper.
Let stand with foil on, 1 to 3 hours or overnight.
If overnight, place in refrigerator.
Drain off liquid.
Combine vinegar, sugar and seeds.
Pour over cuke/onion/pepper.
Stir and cover.
Let stand 36 hours in refrigerator.
Store, covered, in refrigerator.
Makes 1 1/2 quarts or 6 cups.
