Refrigerator Bran Muffins
Refrigerator Bran Muffins is an moderately easy dinner. Made with 3 c. whole bran or bran buds cereal, 1 c. boiling water, 2 eggs, slightly beaten, 2 c. buttermilk and 1/2 c. salad oil, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

In a large bowl, mix bran cereal with boiling water, stirring to moisten evenly. Set aside to cool. Add eggs, buttermilk, oil and fruit.
Blend well. Stir together soda, salt, sugar and flour. Add to bran mixture. Bake now or refrigerate in a tightly covered container for up to two weeks.
Spoon batter into muffin cups 2/3 to 3/4 full. Bake at 425Β° for 20 minutes.
Makes 2 to 2 1/2 dozen.
