Red Hot Pickle Rings
Red Hot Pickle Rings is an moderately easy dinner. Made with 2 gal. cucumbers (yellow), cut into rings after peeling and seeding, 2 c. lime, 8 qt. water, 1 c. vinegar and 1 small bottle red food color, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Mixture. Soak 24 hours. Drain cold water. Soak 3 hours in ice water. Drain.
Cup vinegar, food color and alum; pour over rings with cover.
Heat and simmer 2 hours; drain.
Bring 2 vinegar, cups water, sugar, stick cinnamon and red hots to boil and pour over rings.
Weigh down to keep all covered with mixture.
Let stand overnight.
Heat 3 mornings; the 3rd morning heat to boiling and pack into jars and seal.
