Red Beans and Rice
Red Beans And Rice is an impressive dinner. Made with 2 lg. cans kidney beans, 1/4 c. olive oil, 1 lg. onion (chopped), 1 green bell pepper (chopped) and 2 tbsp. minced garlic, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
In skillet, heat oil over med. heat. Saute onion, bell pepper, garlic in oil for 3-4 minutes. Empty kidney beans in large saucepan. Stir cooked vegetables into beans. Add all seasonings. Bring to a boil, then reduce heat to simmer for 30 minutes. Slice sausage and add to beans, continue to simmer for 30 minutes more. Prepare rice as directed. Remove bay leaves from beans.
Serve over rice.
