Raw Broccoli Salad
Raw Broccoli Salad is an moderately easy dinner. Made with 1 bunch fresh broccoli or may substitute cauliflower, 1/2 to 2/3 c. chopped stuffed olives, 4 chopped, hard-boiled eggs, 1 small onion, minced and 1/4 c. sweet pickle relish, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Wash broccoli and cut flowerets into bite size pieces.
Save the stalks and cook for another dish or soup.
Drain thoroughly. Place broccoli in a large bowl.
Add olives, eggs, onion, relish, lemon juice and enough mayonnaise to bind salad together.
Chill. The salad is better made the night before serving.
